Appetites: A Cookbook

Appetites: A Cookbook by Anthony Bourdain PDF, ePub eBook D0wnl0ad

Anthony Bourdain is man of many appetites. And for many years, first as a chef, later as a world-traveling chronicler of food and culture on his CNN series Parts Unknown, he has made a profession of understanding the appetites of others. These days, however, if he’s cooking, it’s for family and friends.

Appetites, his first cookbook in more than ten years, boils down forty-plus years of professional cooking and globe-trotting to a tight repertoire of personal favorites—dishes that everyone should (at least in Mr. Bourdain’s opinion) know how to cook. Once the supposed "bad boy" of cooking, Mr. Bourdain has, in recent years, become the father of a little girl—a role he has embraced with enthusiasm. After years of traveling more than 200 days a year, he now enjoys entertaining at home. Years of prep lists and the hyper-organization necessary for a restaurant kitchen, however, have caused him, in his words, to have "morphed into a psychotic, anally retentive, bad-tempered Ina Garten."

The result is a home-cooking, home-entertaining cookbook like no other, with personal favorites from his own kitchen and from his travels, translated into an effective battle plan that will help you terrify your guests with your breathtaking efficiency.

A Life in Hiding

When the German army occupied Holland, Annie de Leeuw was eight years old. Because she was Jewish, the occupation put her in grave danger-she knew that to stay alive she would have to hide. Fortunately, a Gentile family, the Oostervelds, offered to help. For two years they hid Annie and her sister, Sini, in the cramped upstairs room of their farmhouse.

Most people thought the war wouldn't last long. But for Annie and Sini -- separated from their family and confined to one tiny room -- the war seemed to go on forever.

In the part of the marketplace where flowers had been sold twice a week-tulips in the spring, roses in the summer-stood German tanks and German soldiers. Annie de Leeuw was eight years old in 1940 when the Germans attacked Holland and marched into the town of Winterswijk where she lived. Annie was ten when, because she was Jewish and in great danger of being cap-tured by the invaders, she and her sister Sini had to leave their father, mother, and older sister Rachel to go into hiding in the upstairs room of a remote farmhouse.

Johanna de Leeuw Reiss has written a remarkably fresh and moving account of her own experiences as a young girl during World War II. Like many adults she was innocent of the German plans for Jews, and she might have gone to a labor camp as scores of families did. "It won't be for long and the Germans have told us we'll be treated well," those families said. "What can happen?" They did not know, and they could not imagine.... But millions of Jews found out.

Mrs. Reiss's picture of the Oosterveld family with whom she lived, and of Annie and Sini, reflects a deep spirit of optimism, a faith in the ingenuity, backbone, and even humor with which ordinary human beings meet extraordinary challenges. In the steady, matter-of-fact, day-by-day courage they all showed lies a profound strength that transcends the horrors of the long and frightening war. Here is a memorable book, one that will be read and reread for years to come.

Battling the Gods: Atheism in the Ancient World by Tim Whitmarsh

Battling the Gods: Atheism in the Ancient World

Battling the Gods: Atheism in the Ancient World by Tim Whitmarsh PDF, ePub eBook D0wnl0ad

How new is atheism? Although adherents and opponents alike today present it as an invention of the European Enlightenment, when the forces of science and secularism broadly challenged those of faith, disbelief in the gods, in fact, originated in a far more remote past. In Battling the Gods, Tim Whitmarsh journeys into the ancient Mediterranean, a world almost unimaginably different from our own, to recover the stories and voices of those who first refused the divinities.

Homer’s epic poems of human striving, journeying, and passion were ancient Greece’s only “sacred texts,” but no ancient Greek thought twice about questioning or mocking his stories of the gods. Priests were functionaries rather than sources of moral or cosmological wisdom. The absence of centralized religious authority made for an extraordinary variety of perspectives on sacred matters, from the devotional to the atheos, or “godless.” Whitmarsh explores this kaleidoscopic range of ideas about the gods, focusing on the colorful individuals who challenged their existence. Among these were some of the greatest ancient poets and philosophers and writers, as well as the less well known: Diagoras of Melos, perhaps the first self-professed atheist; Democritus, the first materialist; Socrates, executed for rejecting the gods of the Athenian state; Epicurus and his followers, who thought gods could not intervene in human affairs; the brilliantly mischievous satirist Lucian of Samosata.

Before the revolutions of late antiquity, which saw the scriptural religions of Christianity and Islam enforced by imperial might, there were few constraints on belief. Everything changed, however, in the millennium between the appearance of the Homeric poems and Christianity’s establishment as Rome’s state religion in the fourth century AD. As successive Greco-Roman empires grew in size and complexity, and power was increasingly concentrated in central capitals, states sought to impose collective religious adherence, first to cults devoted to individual rulers, and ultimately to monotheism. In this new world, there was no room for outright disbelief: the label “atheist” was used now to demonize anyone who merely disagreed with the orthodoxy—and so it would remain for centuries.

As the twenty-first century shapes up into a time of mass information, but also, paradoxically, of collective amnesia concerning the tangled histories of religions, Whitmarsh provides a bracing antidote to our assumptions about the roots of freethinking. By shining a light on atheism’s first thousand years, Battling the Gods offers a timely reminder that nonbelief has a wealth of tradition of its own, and, indeed, its own heroes.
